Angela Amati's Rocket Pockets

My Rocket Pockets are a family favourite that I created in my kitchen using jalapenos as my inspiration. They are packed with 2 kinds of cream cheese and wrapped in bacon. These rockets will drive your family wild.

Ingredients

  • 4 ounces Philadelphia Light Cream Cheese
  • 5 ounces Philadelphia Smokin' Chipotle Dip
  • 1 tablespoon Fresh Cilantro - Chopped
  • 1 Juice of half a lime- fresh squeezed
  • 1/2 cup Back Bacon - Cooked, cooled and finely chopped
  • 10 Jalapenos - large
  • 10 Bacon strips

Directions

  1. In a large bowl, mix cream cheese, chipotle dip, lime juice, cilantro and back bacon.
  2. Once mixed, scoop filling into piping bag and snip the tip.
  3. Slice jalapenos down one side and wash out all the seeds. Note: rubber gloves are recommended.
  4. Pipe cream cheese mixture into hollow jalapenos.
  5. Wrap one slice of bacon around each jalapeno.
  6. Place on a parchment-lined cookie sheet and bake for 25-30 minutes in a 400 degree oven. Turn over the jalapenos after 15 minutes to ensure both sides become crispy.
  7. Place jalapenos on a bed of paper towels to remove some of the bacon grease. Let Jalapenos rest for 5-10 minutes before serving.
  8. Place on your favourite platter and garnish with extra filling dip, cilantro and lime, if desired.
  9. Enjoy!
