Creamy Potato Crisps

A quick, easy and delicious appetizer! I've taken a lot of inspiration from my family and travels abroad. I hope you love this dish as much as I do! Enjoy:)

Ingredients

  • 3 Whole Yellow Fleshed Potatoes
  • 2 egg whites
  • 1 cup Store bought bread crumbs
  • 2 tablespoons dried oregano
  • 2 teaspoons Rosemary
  • 1/2 cup Fresh or ground parmesan cheese
  • 2 teaspoons Garlic Salt
  • 4 tablespoons Extra virgin olive oil
  • 3 Cloves of fresh garlic
  • 1/2 cup Herb and Garlic Philadelphia Cream Cheese
  • 2 tablespoons Green Onions
  • 1/3 cup Dried Cranberries
  • 1/2 cup Chopped Pecans
  • 10 Fresh chives
  • 1 tablespoon Poppy Seeds

Directions

  1. Cut up 3 whole yellow fleshed potatoes into 3/4 cm slices
  2. Dip potato slices into egg whites
  3. Coat potato slices with bread crumb mixture
  4. Heat baking pan in a 375°F oven for 5 minutes
  5. Brush 1 table spoon of extra virgin olive oil onto the baking pan to avoid sticking
  6. Place potato slices evenly onto baking pan and drizzle each slice with some extra virgin olive oil to enhance crispiness
  7. Bake potatoes in the oven for 10 minutes. After 10 minutes, turn each slice over, for an even coat.
  8. While the potato slices are baking, thinly slice 3 cloves of garlic and pan fry them with 2 tablespoons of extra virgin olive oil on medium heat until brown.
  9. While the garlic is browning, we will start with the cream cheese mixture. Scoop a 1/2 cup of Herb and Garlic Philadelphia Cream Cheese into a large bowl
  10. In the large bowl, mix 2 tablespoons of green onion
  11. Add a 1/3 Cup of dried cranberries and a 1/2 Cup of chopped pecans in the Cream Cheese mixture
  12. Stir mixture well until evenly combined
  13. Incorporate the fried garlic and extra virgin olive oil into the Cream Cheese Mixture, mix well.
  14. After 25 minutes of baking, or until the potato slices have browned, remove baking pan from the oven and place on a cooling rack for 5 minutes
  15. Place a dollop of the Cream Cheese mixture on each beautifully golden potato slice
  16. Loop chives and place into each dollop of Cream Cheese for a creative garnish!
  17. Sprinkle a pinch of poppy seeds on each slice for a nice visual appeal
  18. Plate potato slices as you like...ENJOY!
