'Serendipity' Mango Lassi

'Serendib' is the name once given to the Island of Sri Lanka, based on an Arabic word for 'heroes always making discoveries' and from which name the English word 'serendipity' was coined. When I was in grade 8, our high school hosted a cultural group from Sri Lanka and I felt my life instantly changed by the samplings of exotic cuisine, the cultural dancers and traditional shadow puppet performances. Since that time, I have had an innate fascination with this mysterious island and a burning desire to immerse myself in her rich culture. With lush tea plantations, wild jungles, and pristine beaches to exotic wild animals, abundant waterfalls and botanical species, Sri Lanka is a destination that seems to reside somewhere in my soul, a calming place where Buddhism still flourishes and peace and tranquility are abundant. To combat the heat, we could enjoy a refreshing drink well-known in this part of South Asia. Sipping a Mango Lassi in the steamy humidity of the tropical rainforest while spying exotic birds and perhaps even a jaguar would for me, be a most 'Serendipitous' experience!

Ingredients

  • 3 cups plain yogurt
  • 3 fresh mangoes, peeled and cubed
  • 1/4 cup Philadelphia Cream Cheese, plain, softened
  • 1 cup mango nectar
  • 1 cup crushed ice
  • 1 pinch ground cardamom
  • 1 tablespoon sliced almonds, crumbled
  • 1 whipped cream for garnish

Directions

  1. In large blender, combine cream cheese and yogurt; pulse to combine. Add mangoes and mango nectar and puree until smooth; add ice and blend until frothy. Pour into 4 tall glasses. Garnish with a dollop of whipped cream, almonds and a pinch of cardamom,. Serves 4.
