Summer Lovin' Cheesecake

Since summer is ending I want to make a summer inspired cheesecake. What better way to do it than a water mellon inspired cheesecake. I borrowed the colours of water mellon and transferred it into flavours. The peal of water mellon is represented by pistachio crust. Then the light green tasteless layer is represented by lime filling. Next the sweet juicy red water mellon layer is represented by the strawberry filling. All in all the combined flavours reminds me very much of summer.

Ingredients

  • 1/2 cup graham wafer crumbs
  • 1/2 cup ground pistachio nuts
  • 1/4 cup pistachio instant pudding mix
  • 3 tablespoons melted butter
  • 500 grams Philadelphia cream cheese
  • 3/4 cup condensed milk
  • 1/3 cup strawberry jello mix
  • 1 tablespoon lime jello mix
  • 1/4 cup semi-sweet chocolate chips

Directions

  1. With a fork blend the first four ingredients together.
  2. Press the crust mixture firmly at the bottom and side of a 6” in diameter deep round bowl.
  3. Chill the prepared crust in the fridge for 1 hour
  4. In another bowl process 3/4 of 250 g brick of cream cheese until smooth.
  5. Add 1/4 cup condensed milk and 1 tablespoon lime jello mix.
  6. Mix well on medium speed
  7. Pour on top of the pistachio crust.
  8. Using an offset spatula carefully spread the lime filling. Spread the lime filling from the bottom and all the way to the top.
  9. Chill for 1 hour.
  10. In another bowl process one 250 g brick of cream cheese plus the remaining 1/4 brick in medium speed until its smooth.
  11. While the mixer is on slowly add 1/2 cups condensed milk. Mix for 1 minute until its well mixed.
  12. Add 1/3 cups strawberry jello mix. Stir until well incorporated.
  13. Fold in semi-sweet chocolate chips.
  14. Chill in the fridge overnight. The next day loosed the sides with offset spatula. Turn over on a small platter and serve
