Citrus and Vanilla Cheesecake
This delicious cheesecake is quite refreshing with its citrus zest and fresh citrusjuice. It has the added richness of mascarpone cheese. A baked chocolate wafer crust is used in this version, although graham wafer or vanilla wafer crusts are also very good. Serve with a swirl of whipped cream and fresh berries for an elegant dessert.
Ingredients
- 16 ounces Philadelphia Cream Cheese (2 packages), softened
- 1 cup granulated sugar
- 2 cups mascarpone cheese, softened
- 2 tablespoons all purpose flour
- 4 eggs, large
- 1 tablespoon Vanilla Bean Paste
- 1 zest of one lemon
- 1 zest of one lime
- 1 zest of one orange
- 1 tablespoon lemon juice, fresh
Directions
- Cream the softened cream cheese and sugar together in a mixer with a paddle attachment until smooth.
- Add the mascarpone cheese and mix until well blended
- Add the flour
- Add the eggs, one at a time, incorporating fully before adding the next egg.
- Scrape the mixture to ensure that there are no lumps. Strain the mixture, if necessary.
- Fold in the zests from the lemon, lime and orange, vanilla bean paste and the lemon juice.
- Pour over the baked chocolate wafer crusts
- For individual 3 inch cheesecakes, bake at 250oF for 20 minutes or until center of cheesecakes are set.
