Banana Burst Cheesecake

This creamy cheesecake, bursting with flavours of banana & strawberries is one of my favourites. The inspiration came from my 2 year old daughter. She has always loved banana & strawberries and she has grown to love cheesecakes! I thought this would be fun for the kids & a hit with the adults. As a baker I love to experiment with desserts, this has to be one of my best.

Ingredients

  • 1/2 cup unsalted butter
  • 1/3 cup sugar
  • 1 1/4 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 tablespoon water
  • 32 ounces cream cheese
  • 1 cup sugar
  • 3/4 cup sour cream
  • 5 eggs
  • 2 bananas
  • 1/2 cup strawberries (I purée ahead of time)
  • 2 tablespoons cocoa powder
  • 1 400ml sour cream
  • 3/4 cup sugar
  • 1/4 cup crushed pineapple (drained)
  • 1 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1/4 cup unsalted butter
  • 3 tablespoons cocoa powder
  • 1 cup confectioners sugar
  • 1/4 cup 10% cream or whipping cream

Directions

  1. Directions: Preheat oven to 350 Degrees
  2. Crust: Combine flour, sugar, cocoa powder and add butter. Once combined add cold water, as needed. Press in 10’’ spring form pan, using a fork dock the crust and bake at 350 degree for 10-15 minutes (depends what heat your oven gives off). Once cooked let chill completely.
  3. Filling: Blend cream cheese, add sugar & sour cream. Once blended add eggs one at a time, scraping bowl after each addition. You will need to separate the filling among 3 bowls.
  4. First bowl, fold in prepared strawberries and pour into cooled crust. Before you go on with the second bowl you can top the strawberry layer with sliced bananas. Second bowl fold in your mashed bananas and pour over the previous layer. Third bowl fold in the sifted cocoa powder. This will be the final layer for the cheesecake. Bake in 350 degree preheated oven for 30 minutes, reduce heat to 325 degrees for another 30 minutes.
  5. Topping: While cheesecake is in the oven you can mix the sour cream, sugar & pineapple. Once cheesecake comes out of oven you can add the pineapple mixture carefully and bake for another 10 minutes. For the chocolate drizzle you will melt butter in a small saucepan, add cocoa powder once combined you can gradually add the confectioners sugar and cream until you have reached desired consistency. In a separate bowl beat whipping cream & gradually add sugar until soft peaks. Top onto cheesecake with a cherry. Drizzle with chocolate.
  6. Once cheesecake is out of oven you can let sit in refrigerator until chilled. Best to chill overnight.
