Apple Pie Cheesecake

I thought that I would combine two popular desserts into one delicious delight! The creaminess of the cheesecake with the slight crunch from the cooked apples is a winning combination loved by all. This cheesecake is great for any occasion but the warmth from the cinnamon calls out the fall season to me ... delicious!

Ingredients

  • 1 Cheesecake layer:
  • 1 1/4 cups crushed ginger cookies
  • 2 tablespoons chopped walnuts
  • 1/3 cup butter, melted
  • 500 grams (2pkgs) Philadelphia Brick Cream Cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract or vanilla paste
  • 2 eggs
  • 1 Apple pie layer
  • 4 cooking apples, peeled, cored, and sliced
  • 2 teaspoons lemon juice
  • 1 1/2 teaspoons cinnamon (can adjust to suit taste)
  • 1/4 cup sugar
  • 1/2 cup water (or enough to cook apples)

Directions

  1. Heat oven to 350°F.
  2. Combine cookies, walnuts, and butter and press into a 9" springform pan. Bake for about 8 minutes.
  3. For the apple layer, boil apples with just enough water to reach halfway up the apples. Cook until al dente and drain any excess water. Stir in the lemon juice, and sugar and cinnamon until desired taste is reached. Set aside.
  4. For the cheesecake, beat the cream cheese, sugar and vanilla until well blended. Add the eggs, 1 at a time, mixing after each just until blended.
  5. Next, pour the apple filling over the crust and then top with the cheesecake layer. (Alternatively you can pour half of the cheesecake mixture onto the base, then the apple filling, then finish with a cheesecake layer) If desired, sprinkle the top with a crumb topping or walnuts.
  6. Bake until centre is almost set, about 40 minutes. Once cool, refrigerate for 3 hours.

    Thanks for the lovely recipe, Sharon! I agree that the apple-cinnamon rings of autumn, but I think adding that cheesecake rings of anytime! Good luck!
