Cheery Cherry Cheesecake!

This is my famous cheesecake recipe that is always requested wherever I go! What makes it the best is the amount of butter I use for the crust, and that the crust pre-bakes on its own for 10 minutes. Cherry is my most requested flavour for this recipe, but you can also substitute bumbleberry fruit topping, peach--or any flavour you find the most cheerful!

Ingredients

  • 1 1/2 cups Graham wafer crumbs
  • 2 tablespoons sugar
  • 1/2 cup butter
  • 19 ounces Philladelphia Cream Cheese (plain/unflavoured)
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 3 eggs
  • 1 can of Cherry pie filling, to be used as topping (or substitute for any fruit topping of your choice)

Directions

  1. Preheat oven to 350 degrees.
  2. Combine graham wafer crumbs & the 2 tbsps of sugar in a mixing bowl.
  3. Melt butter in microwave for 60 seconds and stir into graham wafer crumb & sugar mixture.
  4. Once well mixed, press graham crumb mixture into bottom of ceramic pie pan with a fork.
  5. Bake for 10 minutes and set aside.
  6. Reduce oven heat to 300 degrees.
  7. Cream cream cheese & sugar in a food processor or mixing bowl.
  8. Add vanilla to cream cheese mixture.
  9. Beat in eggs 1 at a time.
  10. Pour wet mixture over cooling graham wafer crust.
  11. Bake at 300 degrees for 1 hour exactly
  12. Set pie to cool for 45 minutes, then top with cherry pie filling, being sure to cover entire cake surface so not patchy.
  13. Refrigerate for 8 hours until cake is absolutely cold.
  14. Serve, and enjoy the compliments! Oh, don't forget to slice yourself a piece!
