I would like to start off by saying that I cannot wait to make every single cheesecake I have seen so far in our Cheesecake of the Year contest! For this week's Spotlight, I decided to share some really fun ones I found that blend cheesecake with other fabulous dessert favorites!
First, we have member Maria Nickel's Chocolate Sticky Toffee Pudding Cheesecake! "I LOVE LOVE Sticky Toffee pudding cake & cheesecake. SO I thought why not combine my two loves and make it even more rediculously awesome!" I'm excited to give this one a try.
Maria Morelli showed us with her Killer Carrot Cake Cheesecake that the only thing better than the cream cheese frosting on a carrot cake is a cheesecake on top of a carrot cake! Plus, with fantastic flourishes like crushed Amaretti cookies in the base and pineapple and coconut in the carrot cake, Maria tells us this cheesecake was a "huge hit with the family!" I'm not surprised, are you?
"The creaminess of the cheesecake with the slight crunch from the cooked apples is a winning combination loved by all," says Sharon McGurk of her Apple Pie Cheesecake. It looks delicious!
Nothing says summer like a tasty fruit crisp, and nothing says yum like syllefort's Blueberry Nectarine Crisp Cheesecake! "I looked in my fridge for fresh fruit and when I saw the nectarines and blueberries, I decided to incorporate them into one of my favourites desserts -- a crisp!" says syllefort. "This creamy filling with fresh fruit and a crispy topping just meld beautifully together."
Meeshie asked, "What could anyone love more than a gooey pecan filled all Canadian butter tart? How about a rich, creamy vanilla cheesecake with a chunky pecan shortbread crust, lined with NINE gooey pecan butter tarts, topped with whipped cream, butterscotch and toasted pecans?" In her recipe for The Great Canadian Butter Tart Cheesecake she has done just that! Yum!
Inspired by her love of creative baking (and her "love to eat creative baking filled with all my favourite treats"), Lisa Wright put together this amazing for Lisa's Ridiculous Cheesecake - Brownie Caramel Peanut Butter Cup Cheesecake. It's got brownies, it's got peanut butter cups and it's got cheesecake. What more could you possibly ask for in a dessert?
MeganVoogt put together two classics for this combo! Her Tiramisu-Inspired Cheesecake "is a combination of cream cheese and mascarpone cheese flavored with coffee liquor and vanilla. It has layers of coffee-soaked lady finger cookies, chocolate cookie crumble and caramel." Oh my! I'll take 3, please.

Just got back from a camping family get together and saw you included by cheesecake in this spotlight - thank you...it was great fun creating it and eating it...and this weekend I brought the cheesecake brownies from this recipe as a treat for everyone - they loved the combination!!!
I too can't wait to try the many different cheesecake recipes - perhaps a cheesecake sampling party is in order...
