Recipes Inspired by Mom
May is a month when I think a lot about my own mum in Australia (who is largely responsible for my love of cooking and food!) and my 4 mums in Belgium -- yes, 4! I lived there for a year after I finished high school on a youth exchange program with 4 different families. This recipe is inspired by both my time in Belgium and one of my mum’s classic desserts.
Breakfast in Belgium would often include something called fromage blanc -- basically a creamy soft cheese made with milk and cream with the consistency of cream cheese -- served with a spoon or two of jam to sweeten it up. It’s like the “fruit on the bottom” yoghurts, only way better! You couldn’t buy fromage blanc in Australia back then but my mum’s coeur à la crème came pretty close in taste and consistency and every time I ate it, I’d think fondly of breakfast in Belgium. I’m a big fan of coeur à la crème and like to experiment with different versions.
This is a lightened-up version of coeur à la crème mixture served in little Mason jars with dollops of jam -- perfect for Mother's Day brunch or dessert. Or, you know, anytime. ;)
