Fall is at our doorstep and we’re into a new back-to-school routine.
There are book lists, homework, school supplies, packing lunches and the equally important after-school snacks. It seems when 3 pm hits, so do the munchies. I find, as a mom, it’s challenging to find after-school snacks that satisfy my growing children’s hunger without filling them up too much before dinner. Also, I don’t want to be spending so much time on prep that snack time imposes on my afternoon schedule. So when it comes to after-school snacking I follow a few simple rules:
1) Keep it simple!
2) Incorporate a protein (this will help satisfy their hunger for longer).
3) Make it tasty (this is where the Philly comes to the rescue).
Something like these Creamy Chicken Wraps fit the criteria just perfectly.
Sometimes the after-school snacking urge comes early. I like to keep a container of fresh cut veggies in the fridge and a good supply of Philly Dip alongside so that if we need a quick snack midday, it’s ready to go, quick and easy, and then back to work.
And who can talk about back to school without a bit of PB & J? Since we’re all eagerly awaiting the announcement of the Cheesecake of the Year winner on Friday, I thought I would share my recipe for my yummy Peanut Butter and Jam Cheesecake, which takes time to prepare, but makes for a delicious afternoon treat for the whole family!

Am going to have to try that PB$J cheesecake! How does a mom with 11 children find time to pipe the edge of a cheesecake? I am truly impressed. One thing my Mother used to do during winter when we were outside playing in the snow ... We*d come in to a cup of hot chicken or beef broth filled with vegetables: frozen peas or corn and some grated fresh vegetables like carrots or zucchini. Not too far a stretch if you already have a bin of cut vegetables in the fridge. It was an instant warm from the inside out. Thanks Laurie! -

Awesome, Julie, I'm going to go check out your recipe right now! Chicken wraps are a huge hit here, but I think I'd choose the cheesecake option myself, lol! I can't wait to see who the grand prize winner for the Cheesecake of the Year is, I'll be making that one for sure. -
