
Are you a chocolate lover like me?
A chocolate craving can kick in just about anytime, regardless of the weather, the season or even the time of day. (Yes, I’ve inhaled a chocolate croissant for breakfast before). And when it happens, you can’t think of anything else until you’ve had something chocolate. Here are a few questions I often get about working with chocolate:
1. What does the % number represent on a package of chocolate? That percentage represents the amount of cocoa solids in the chocolate. Chocolate is composed of these cocoa solids, in addition to cocoa butter, sugar, milk and vanilla. The greater the percentage of cocoa solids, the stronger and darker the chocolate is since there is less room for the other ingredients.
2. Can I interchange white and dark chocolate in my recipes? I wish the answer was a simple yes, but it’s a no. White, milk and dark chocolates are not interchangeable in recipes. Because of the different percentages of cocoa solids, the different styles of chocolate melt at different temperatures, but, more importantly, set differently after melting and being incorporated into a recipe, such as mousse or cheesecake.
3. What is that white dust I sometimes see on the surface of chocolate? It may appear to be mold, but that white film you sometimes see on chocolate is called a “bloom.” It is simply a bit of cocoa butter that has come to the surface of the chocolate, and is a sign that the chocolate perhaps got a little too warm or cold at some point. The chocolate is still 100% fine to use even if it has this bloom.
4. How should I store my chocolate? Chocolate should be stored in a cool, dark place in order to avoid developing a “bloom” from a change in temperature while storing. Chocolate typically keeps for a year, but follow the date on the package or wrap. If you’ve opened a block or package of chocolate and not used it all, store it in an airtight container or resealable bag.

Dark Chocolate with bacon pieces from Vosages Chicago - best chocolate bar ever!!! Sweet, bitter, salty, crunchy and a little smokey from the bacon. I love it! -

Hard to choose but Chocolate Cheesecake is definitely a favourite, but less decadent would be dark chocolate covered almonds. -
I love chocolate so many ways,melted in a fondue and eaten just as it is dipped in with dried fruit, etc.... and including making desserts like Triple Chocolate cheesecake using Philly the original full fat cream cheese of course! Yum-o!!!! -
So many possibilities ... so hard to choose! Definitely one of my favorites has to be 3 chocolate cheese cake using Philly Cream Cheese of course! -

i'm afraid i cannot just pick just one Chocolate treat since i Love Chocolate.any treat that has chocolate is for me .there hasn't been a day pass me by that i didn't have Chocolate in one form or another. my home will never be chocolate free.Addicted maybe !! -
Ok now we are talking my favorite topic here CHOCOLATE!!!! I'd have to say my favorite chocolate, although I have a few, my absolute favorite would have to be Reese's peanut butter cups! I mean really how can you go wrong with the two greatest things, Chocolate & Peanut Butter Yum!!!!!!! Ok now I'm having a chocolate craving :) -
My alltime favourite chocolate treat is old fashioned brownies with caramel & pecans. Mmmmmm. I also like chocolate fudge with jalapeno. -
I always love my home cooked Chocolate Chip Cheesecake Cookie Bar I make it with dark chocolate, and my Philadelphia cream cheese . -
One of my favorite movies is "Chocolat" starring Johnny Depp and Juliette Binoche. In that movie there is a woman operating a chocolate shop in a small French village. She makes amazing creations which also mix chili pepper with cocoa beans. Interesting combination. For myself, my favorite treat is bites of the darkest chocolate bar I can find alternating with bites of raw walnuts and raw almonds and also eating a soft white marshmellow along with it. It is a low fat, healthy treat.
