Yesterday, Anna shared a 3-course meal plan with us. Well, that inspired me, and I do love picnics, so I turned to Cooking with Philly to find the perfect appetizer, main course and dessert for a lovely garden rendezvous with some friends this weekend!
For my first course, I’ll whip together this tasty spread and toss it in a glass-lock container for the road:
And the crackers and tomatoes can be easily packed and toted along as well. For my main course, I will make these delicious sandwiches:
Those sweet grilled vegetables all piled together are going to be so delicious this time of year! And for the perfectly portable dessert, I have chosen these fun chocolate treats:
Sweet, yummy and, best of all, chocolate-y!

An aside about piled-high stuffed sandwiches like the Ratatouille Baguette: Its easy to wrap the cut portions in wax or white paper to keep them neat and easy to eat, but it is WAY more drop-dead-picnic-sexy to wrap them in cloth napkins.
And we all like drop-dead-picnic-sexy, right?
Do this: Poke around the dollar stores and find some simple and plain white cloth napkins- if you hunt for a bit you can usually find 20x20 polyester ones at two for a dollar. Treat them with a WASH-IN stain repellant (Scotchguard or the like) before the first use and you are good to go.
Your sammiches will look incredible, you are reducing waste, and they wash up like new every time if you treat them first. -

Oh yumm Mark, I am definitely going to do this and, I too, am intrigued by the grilled Ratatouille Baguette. We have been eating so healthy this summer and that looks like another wonderful way to enjoy summer's abundance of vegetables. I'm putting this picnic, along with Mark's idea, on my list of must tries for next week. -
Ooo, that's a great tip, Mark! Roasted garlic is a pretty amazing addition to anything. I'm glad you agree that that spread was so good -- I'll have to try roasting the garlic next time! Heather, let us know if you give it a try. I must say, that Grilled Ratatouille Baguette was pretty out of this world with all the seasonal veggies I could roast and shove in there with my Philly! -
Here's a fast tip: When you use garlic in any avocado mash/spread/guacamole/goo/whatever, roast it first. The garlic, not the avocado. Put however many cloves of garlic you need into a LOOSE foil pouch and pop 'em in the oven at 350 for 30 minutes.
I just made Miss Philly's spread with a roasted clove of garlic and used it on a roast beef sandwich - it's excellent! It doesn't just look good, it IS good.
BTW: If you have never tried it, beef and avocado are a brilliant match. -
