Using strawberry Jell-O™ mix to make the pink fruit, chocolate chips for the seeds and pistachio to colour the rind, Carousel Ussher created this beautiful cheesecake inspired by the summer.
In these last days of summer, thinking back on the season, what would you call this cheesecake? Share with us below!

This look is absolutely fantastic! If it tastes as good as it looks, it will be a permanent add to my summer recipes!! -

This is kind of frightening (in a good way). I would have called it Watermelon Breeze Cake. -
This cake brings back memories for me. A friend and I made an ice cream cake just like it in high school for a Martha Stewart party (I guess I always loved cooking!). I'd call it Martha Melon Surprise :) -

As soon as I saw it my mind went back to seeing watermelon as a 6 year old child while visiting my Grandparents in Sarasota Florida and the movie "Song of the South". I would either call it that or "Brierpatch" cheesecake. What a terrific idea!! -
