Hello, everyone!
A couple of weeks ago I “shared” a whole Saturday’s worth of Olson meals with you. :) Did you wonder what came next on our plates? A simple Sunday brunch, perhaps? Not quite...
This is how our Sunday of food and fun unfolded:
Breakfast – As I told you, we drove up to our little cabin on a lake on Saturday and breakfast at the lake is always a treat! On this Sunday, in particular, we enjoyed fried eggs with a potato/veggie hash made from last night's leftovers). Also, we tossed together some heirloom mini tomatoes with black olive tapenade as a condiment.

Lunch – For lunch we just had a quick snack of hummus (leftover from Saturday). We were cleaning up and packing up -- and saving room for an early Sunday supper!
Supper – What a treat -- the first roasted chicken of the fall season! This is always a landmark moment, when we slow down on the grilling and turn on the oven. We had friends over for an early supper and the menu included:

Caesar Salad with Homemade Dressing and Garlic Pita Crisps
Garlic and Lemon Roasted Chicken with Pan Juices
Mashed Potatoes and Carrots with Green Onion
Roasted Golden Beets with Jalapeno and Lime
Maple Roasted Parsnips with Almonds
Steamed Broccoli and Cauliflower
By the time we packed up and headed home, we were refreshed, having enjoyed a wonderful and well-fed weekend.

The roasted beet with jalepeno and lime sounds like a great combo. I'll be trying that next week for sure. -

Ohhhh. This will inspire a quiche for the weekend. It's been too long... maybe instead of smoke salmon spread with Philly, a smoke salmon/cream cheese quiche. YUM! -

Leftover potatoes go with almost everything and you can add extra vegetables and spices to complement the meal. -

I'm wondering if Anna and her husband ever get dinner cooked FOR THEM by their friends??!! ANd what would their friends make them?!!! -

I just love the velvety texture of Philadelphia cream cheese on just about everything.
I love to whip up a simple dip with cream cheese , onion soup mix, and chives , it's great with regular
Chips or pita chips.... It's oh so good
